WHere is an easy take on a beverage found on a new cocktail list. Designed as a batch prepared mix which is packed full of tastes associated with Christmas time, making it excellent for hosting a festive gathering. Reserve the remaining syrup to use in brunch beverages, sweets, or to mix additional servings of the drink.

Yields 10 people
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Combine every items in a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Next, turn off the stove allowing it to cool entirely. Decant to a sealable bottle, cap it and store chilled, it can be stored for up to a month.
Preparing the Batch Mix: Combine all the liquid ingredients into a big jug, leave to sit for an hour, then filter it preferably using a fine cloth, so it's fully clarified.
To serve: Add 85ml of the batch mix into your cocktail shaker containing ice, gently stirring gently for about 60 seconds to cool it down. Filter into an cold coupe glass or a similar vessel, top with some cranberries and complete it using a light spray of the essential oil over the drink.
